FRATELLI FRESH BRIDGE ST

 

The Fratelli Fresh chain has become that of legend in Sydney. Without hesitation I can really say it is one of my favourite places. Ever. The laid back vibe, good food and lack of pretension is enough to get anyone there, any night of the week. The waiting time is testament to its greatness, and you are better off to get there earlier, rather than later! The ragu bolegnese is not to be rivaled in any restaurant I have ever eaten at and I could honestly eat it every single night! After successful openings in Danks St, Macleay St Potts Point and Hickson Road Walsh Bay, Fratelli Fresh has now set its sights on the CBD and its business customers.

Now city dwellers and workers alike can pop in for a spot of lunch, or dinner, in the new and improved Bridge St premises. The new Fratelli Fresh comprises retail, Café Sopra, an Aperitivo Bar, Pizzeria and Mozzarella Bar, as well as a private dining room [Cuvee Louise Room] and private bar [Campari Bar], all designed by Michael Delany [who also designed Honky Tonks and The Bottom End in Melbourne and The Carrington, The Abercrombie, The Flinders and The Norfolk in Sydney among other projects]. We spoke to Fratelli Fresh owner Barry McDonald to hear about the developments.

What is the secret behind your Bolognese ragu? I can’t stop eating it! 
We add fresh tomato puree to the sauce.

Why do you think the Fratelli Fresh series has been so successful?
Great food, really good value, friendly and enthusiastic service and a warm environment.

When did you expand into Sopra after starting Fratelli Fresh?
The first Café Sopra opened nine months after the Danks Street store opening.

How did you decide the city would be the perfect spot for your next installment? 
We have many regulars at the other stores who work in the city.

How did you choose the location?
We fell in love with the Burns Philp building.

Where did the inspiration come for adding pizza to your repertoire?
Numerous trips to Italy, and I wanted to offer our customers an alternative throughout the day.

Tell us about the Mozzarella bar.
I love salads and I love mozzarella. Mozzarella bars are not uncommon in parts of Italy and they really suit our climate.

What’s next for Fratelli Fresh?
No new stores planned. We’re just fine tuning what we already do.
